Vege Biscuits for Fussy Kids

Mornings can be tough, especially with a fussy toddler at hand. If you need something with low GI, that will fill little tummies with much needed nutrients, then this one is for you. 

Best of all this one has all the kinds of things you usually have at home in the pantry and fridge. It freezes well and is great to make in bulk for lunch boxes too. 

  • 1 Banana
  • 1 cup Zucchini
  • 1 Egg
  • 1 cup Oats, quick-cooking
  • 1/2 tsp Baking soda
  • 1 cup Chocolate chips, semisweet
  • 1 tsp Cinnamon
  • 2 cups Flour
  • 1/4 tsp Salt
  • 1/4 cup Stevia/Natural Sugar replacement  
  • 1 tsp Vanilla extract
  • 1 tsp Maple Syrup 
  • 3/4 cup Nuts
  • 1/4 cup Butter
Combine all ingredients in a bowl and minx thoroughly
Line a baking tray with non-stick baking paper 
Roll into balls of equal size and  place evenly onto tray 
Bake in an oven for 30 mins or until golden (temp at 180 degree's for fan forced ovens)
